Griffith College Cork merged with Skerry's College Cork in 2005 to form Griffith College Cork, an independent third-level higher education institution. Griffith College Cork offers degrees and diplomas in many fields including Business, Law, and Computing, among others. QQI validates all undergraduate and postgraduate degree programmes, and some of them require submission of an application through the Irish CAO system.

The college is located on Wellington Road, near the city centre of Cork, on a vast 5-acre site.

Griffith College Cork offers undergraduate, postgraduate, and CPD/short courses programmes. Undergraduate courses include BA (Hons) in Accounting & Finance, Bachelor of Engineering in Industrial and Systems Engineering (B.Eng.), and BSc (Hons) in Computing Science. As for postgraduate programmes, they include a Certificate in Quality and Regulatory Practice in the Pharmaceutical Industry, MA in Education, Learning and Development, MSc in International Pharmaceutical Business Management, among others.
